- 1 as required * Ra-yu
- For the Thai-style sauce
- 3 tbsp Sweet chilli sauce
- 1 tbsp Chinese chicken stock granules
- 2 tbsp Vinegar
- 1 1/2 tbsp Lime or lemon juice
- 3 tbsp Fish sauce
- 1 tbsp Honey (or sugar)
- 3 tbsp Boiling water
- 120 ml Still water

- [For the Thai-style sauce] Dissolve the Chinese chicken stock granules in boiling water.
- Add the remaining seasonings. Adjust the amount of honey and vinegar. Adjust the saltiness with fish sauce. Chill in the fridge until required.
